David Marks

David Marks is internationally renown in the cutlery industry. He's a master grinder and expert in edge sharpening and restoration. Kitchen knives, Japanese sushi knives, scissors, and straight razors are sent for his attention from throughout the U.S. David is among a handful of professional sharpeners that do their work by hand, preferring whet stones over grinding machines.

David has been teaching culinary knife classes for over 30 years. He's held classes and seminars in the kitchens of great restaurants, culinary schools, and prestigious retailers, including Williams Sonoma, Bloomingdales, and Neiman Marcus. Currently he's also teaching the techniques of Western and Japanese knife sharpening to the Massachusetts Vocational Culinary Arts teachers.

David first started working in the family business, Stoddard's Cutlery, after college. He had the opportunity to work with almost every kind of knife, and visit factories worldwide. David became the exclusive Wusthof distributor for the largest US market. He introduced the brand, determined marketing and pricing strategies, and gave hundreds of product seminars. Within 10 years, Wusthof became one of the world's most recognized names for quality cutlery.

David also started his own product development and marketing company, Marcovici Designs, and has developed numerous products for various museum shops, iconic specialty shops, and catalogs, including The New York Museum of Modern Art (MoMA, NY), MoMA-SF, Pierpont Morgan Library NY, Tiffany & Co., Bergdorf Goodman, Takashimaya NY, Barneys, Davidoff of Geneva, and Neiman Marcus.

Catherine Walthers

Instructor and chef Catherine Walthers has written four cookbooks on cooking with vegetables and healthy eating. Her first cookbook, Greens, Glorious Greens has become a cult classic as one of the first cookbooks to demystify cooking leafy greens from Bok Choy to turnip greens. Her next cookbook, Raising the Salad Bar, was named one of the 10 best summer cookbooks by NPR. Her most recent published work is Kale, Glorious Kale - called the “definitive book about kale” with 100 new recipes. She also develops seasonal recipes and cocktails for magazines and works as a private chef for families in the Newton/Boston area and on Martha’s Vineyard, where she lives and operates the West Tisbury Cooking Lab for cooking classes.
