Pen & Cob's spruce syrup is a small-batch Maine ingredient crafted from hand-harvested spring tips, slowly macerated in organic brown sugar using traditional methods that preserve their bright citrus and evergreen character. Limited to a narrow spring harvest window, each bottle captures a fleeting moment rooted in place, craftsmanship, and community. Drizzle over desserts, add to cocktails and mocktails, spoon over ice cream and fruit, pair with charcuterie, whisk into vinaigrettes, or use as a glaze for pork and chicken.
